Fruit Pie With Almonds
This pie is perfect for summer days, light and stuffed with fruit: berries, apricots, peaches, cherries, plums, simply anything you have at that moment at home or in your garden. Topped with almonds and cinnamon, it has no choice but to be delicious. Moreover, it is easy and fast to make, a big advantage in the summer when days are warm and sunny and we would rather spend our free time outside than by the oven.
Ingredients
- 180 g spelt flour (you can use half whole grain and half plain flour)
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla powder
- 120 g brown sugar
- 120 g butter
- 2 “happy chicken” eggs
- 200 g yogurt or butter milk
- random mix of fruit
For the topping:
- 2 tbsp brown sugar
- 2 tbsp sliced almonds
- 1 tbsp cinnamon
Method
- Preheat the oven for 180 °C (350 °F) and prepare a baking form of 23-25 cm in diameter. First grease the form with butter and then line it with baking paper.
- Mix flour, baking soda, baking powder and vanilla powder in a bowl.
- In another bowl, whisk sugar and room temperature butter together. Then whisk the eggs and yogurt in the batter.
- Add the flour mixture to the batter and mix it until smooth.
- Spread the batter in the form equally and place the fruit on the top.
- Sprinkle it with the topping.
- Bake until golden.
